There are two levels of verification on both the production process and the product

LEVEL 1 – PRODUCER’S SELF-MONITORING

The Producer verifies the compliance of raw materials, processing and end product with the Production Regulations. This is performed through precise and continuous monitoring of the process and repeated sensory and laboratory checks on the product under process.

LEVEL 2 – CERTIFICATION BODY VERIFICATION

The Producer is subject to the monitoring activity of a third-party independent body, under delegation from the Ministry for Agricultural, Food and Forestry Policies, objectively ensuring the compliance with the rules established by the Production Regulations.The Inspection Body inspectors supervise the accredited Producers activity to ensure that their operations comply with the Regulations. The inspectors carry out inspections at the production units and conduct laboratory analyses. The Inspection Body authorized by the Ministry to supervise the production of Bresaola della Valtellina PGI is CSQA Certificazioni Srl, based in Thiene and operating with a staff specialised in the food and agricultural industry.

Those products that do not meet the minimum standards set forth in the Regulations cannot be marketed as “Bresaola della Valtellina PGI” and must be downgraded.

Producers who do not abide by the provisions of the Production Regulations will have their production authorization suspended or revoked, depending on the severity of the infringement.

The monitoring on producers is complemented by market surveillance carried out by the Protection Consortium supervisors, in collaboration with the Central Inspectorate for Quality Protection and Fraud Repression of Food and Agricultural Products under the Ministry for Agricultural, Food and Forestry Policies.
