n order to be acknowledged as producers of the real "Bresaola della Valtellina", they must respect minimum requirements. 

They must:

be located in the typical production area, only in Sondrio's County;

respect rules, especially referring to structures and equipping that must guarantee consumers about product's quality.

Acknowledged producers must respect the Production's Regulations and must be controlled by C.S.Q.A. from Thiene (Vi).
